Blackstone Griddle
Ingredients
- 1 lb Ground Beef
- 1 can Black beans Drained and rinsed
- 12–16oz bag frozen Sweet Potato Chunks
- 1 packet taco seasoning (however much water it calls for on the packet)
- 1 1/2 cups Fiesta blend cheese shredded
- Optional Sour Cream, tomatos, avocado, lettuce, etc. Whatever you want!
Instructions

Preheat your griddle to medium-high.

Drizzle olive oil. Add ground beef on one side, and sweet potatoes on the other.

Chop and brown ground beef.

At the same time, toss the potatoes often so that they can cook through (to speed this up, you can thaw them a bit ahead of time).

Combine the two. Add black beans. Stir to incorporate and spread out.

Sprinkle taco seasoning over all. Add the water and mix well, until the sauce forms and coats everything.

Once all ingredients are heated through and sweet potatoes are starting to char a little, turn griddle to warm and top with shredded cheese. (If you have a melting hood, this is a good time to use it!)

Top however you want! I always do sour cream and tomatoes. Usually I do avocado/guac and some cilatro, too. I jsut didn’t have any the day that I photographed this recipe!
