Ingredients
- 2 (6oz) sirloin steaks
- 3 tablespoons soy sauce
- 2 teaspoons honey
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1 teaspoon lemon juice
- Pinch of lemon zest
- 2 teaspoons sliced green onion
- 4 slices sourdough bread
- 4 eggs
- Unsalted butter
- Olive oil
- Salt and pepper

- Wooden chopsticks
Directions
- Optionally, place two chopsticks on your cutting board with the steak in between. Use the chopsticks as a guide to slice the steaks at an angle, stopping the knife from cutting all the way through and creating a “waffle fry” pattern. Flip the steaks and repeat.
- Season the steaks with salt and pepper, then cook for 2 minutes on high heat with a bit of butter and olive oil.
- While the steaks are cooking, in a small mixing bowl, combine soy sauce, honey, garlic paste, ginger paste, lemon juice, lemon zest, sesame oil, and green onion. Stir well to evenly combine.
- Flip the steaks and drizzle some sauce over the tops. Cook for an additional 2 minutes.
- Toast the sourdough slices. Optionally, rub the bread into the beef fat, juices, and butter for added flavor.
- Crack the eggs into a separate bowl, add salt and pepper.
- Once the bread is toasted, place two pieces on your plate. Top with fried eggs and place the steak beside them. Optionally, drizzle with more glaze.
