Ingredients
- 1 package Simply Potatoes Shredded Hashbrowns
- 1 can cream of mushroom soup
- 1 pint sour cream
- 2 cups cheddar cheese (or Colby jack)
- 1 teaspoon salt
- ¼ teaspoon pepper
Additional ingredients
- 1 lb bacon
- 1 lb sausage
- 6-8 Eggs
- 1 tablespoon butter
Directions
- Preheat the Blackstone on low and begin cooking the bacon and sausage.
- For the Hashbrown Casserole Cakes, combine all the ingredients in a bowl, ensuring they are well mixed.
- Use some of the bacon grease on one side of the griddle to fry the Hashbrown Casserole Cakes.
- Spoon the casserole cakes onto the griddle and fry for 3-4 minutes. Flip and continue cooking on the other side until they are golden brown and cooked through.
- Fry the eggs on low heat with butter. Break the clear membrane around the yolk to ensure they are fully cooked.
- Remove all items from the griddle, serve, and enjoy!
