Chicken 🐓 Fried Rice 🍚 My favorite thing to cook on my Blackstone! Just as lrewarding as the cook was the clean!
Ingredients:
Day old white rice
Frozen pea and carrot mix
Chicken pieces marinated in your preferred sauce
Eggs
Salt and pepper
Soy sauce
– Cook the marinated chicken and frozen veggies on separate sides of the cooktop on medium low. Use oil to cook both. Season both with pepper.
– When chicken begins to brown and veggies brighten (4-5 mins) combine and continue cooking another 2-3 minutes.
– Move to one side of cooktop and turn heat on that side to low. On the opposite side begin frying the rice in oil. Spread the rice in a thin layer to cook it evenly. Keep it moving continuously. Cook 3-4 minutes.
– Combine rice with chicken and veggies. Season with pepper. Add soy sauce and any preferred Asian cooking sauce (I used Japanese BBQ sauce from Costco). Cook another 30 seconds to 1 minute. Turn all burners to low.
– Create a reservoir in the middle of the rice and add oil. Pour beat eggs into the reservoir and scramble. Once they begin to solidify combine with rice, veggies and chicken.
– Taste and add more sauce and/or pepper if needed. Note there is no need to use salt in this recipe as the soy sauce and Asian sauce has plenty.
