Cheese tortellini w/ kielbasa, spinach, mushrooms, tomatoes & fresh mozzarella! Great light meal for a 107 degree days here in Boise, Idaho.
Ingredients:
– Frozen cheese tortellini – 24 ounces
– Two 14oz kielbasa sausages
– 8 oz of mushrooms
– 8 oz of fresh spinach
– Cherry tomato’s sliced in half (as much as you like)
– Fresh mozzarella balls
Instructions:
– Heat your cooktop to medium high heat and apply a thin layer of oil.
– Place the kielbasa sausage on one side of cooktop.
– On the opposite side, place the frozen tortellini.
– Cook both the sausage and the tortellini for about 3 minutes. Drizzle both with some EVOO and move it around constantly.
– Add the mushrooms and continue cooking another 2 minutes.
– Combine the sausage, tortellini and mushrooms. Season with salt and pepper to taste. Cook another 1-2 minutes.
– Turn the heat to the LOWEST setting.
– Add the spinach to the rest of the ingredients. Cook until the spinach has cooked down.
– Add the sliced tomatoes and cook another 2 minutes.
– Transfer the mixture to a bowl and while still hot, add mozzarella balls.
