Ingredients
- 2 lbs. brisket
- 1 package Simply Potatoes Chunked Style with Peppers and Onions
- 4 Eggs
- 2 cups shredded cheese
- 2 tablespoons butter, oil, or Bacon Up
Directions
- Preheat the griddle to low/medium heat.
- Add oil to the griddle and place the Simply Potatoes Chunked Style with Peppers and Onions on it. Cover with a dome and flip every 3-4 minutes until done.
- Dice the leftover brisket into small pieces and place them on an open section of the griddle. Cook for 3-4 minutes.
- Once the potatoes are done, combine them with the brisket and stir well.
- Add a bit of oil to the griddle and cook the eggs.
- Stir shredded cheese into the brisket and potato mixture until melted.
- Plate the potatoes and brisket, and place the cooked egg on top. Serve and enjoy!
