Ingredients:
- 1 lb 85/15 ground beef
- 4 slices sourdough bread
- 8 slices Munster cheese
- 4 eggs
- 2 tbsp butter
- 2 diced golden potatoes
- 1 tbsp avocado oil
For seasoning:
- 2 tsp taco seasoning
- Salt and pepper to taste
For the sauce:
- 3 tbsp mayo
- 2 tbsp sriracha sauce
Directions:
- Preheat a griddle or a large non-stick skillet on medium-high heat.
- In a bowl, mix diced potatoes with 2 teaspoons of taco seasoning.
- Add 1 tablespoon of avocado oil to the griddle or skillet, and then add the seasoned diced potatoes. Cook them until they are crispy and golden brown. This should take about 8-10 minutes. Once done, remove from the griddle or skillet and set aside.
- In the same griddle or skillet, add the ground beef and season it with 2 teaspoons of taco seasoning. Cook the beef for about 10-12 minutes, until it’s nicely browned. Once cooked, remove from the griddle or skillet and set aside.
- In a small bowl, whisk the eggs with salt and pepper. Place the griddle or skillet over low heat and add the whisked eggs. Stir the eggs continuously until they are cooked through. Once cooked, remove from the griddle or skillet and set aside.
- In another small bowl, mix 3 tablespoons of mayo with 2 tablespoons of sriracha sauce to make the sauce.
- To assemble the sandwich, place 2 slices of Munster cheese on each slice of sourdough bread.
