Blackstone Lemon Chicken and Broccolini is a complete meal and semi-healthy recipe for the griddle with an easy lemon garlic herb butter!

INGREDIENTS
- 4 tablespoons melted butter
- 3 tablespoons lemon juice
- 3 tablespoons chopped fresh herbs (I used thyme, rosemary, and basil)
- 5 to 6 cloves garlic minced
- 4 to 6 boneless skinless chicken thighs (or breasts)
- kosher salt, pepper, seasoning blend of choice (optional)
- 1 bunch broccolini
- Optional: lemon wedges
INSTRUCTIONS

Mix together the melted butter, lemon juice, herbs, and garlic in a small bowl.

Season the chicken with kosher salt, pepper, and seasoning blend of choice if using.

Preheat the griddle to medium heat for a few minutes. Brush some of the lemon garlic butter on the griddle and add the chicken. Let the chicken cook 2 to 3 minutes then add the broccolini, season the broccolini with kosher salt and pepper.

Cook the chicken and broccolini 7 to 9 more minutes, flipping both a few times. Brush both the chicken and broccolini with the lemon garlic butter a few times during the last few minutes.

Serve with lemon wedges to squeeze over top if desired.
