Blackstone Griddle

Flat Top Grill/ Griddle
INGREDIENTS
- 6 eggs
- kosher salt, pepper
- 1/2 cup milk or flavored coffee creamer
- 1 tablespoon sugar
- 16 slices French or Italian bread
- 8 to 16 links breakfast sausage (depending on if you want a whole sausage link or a half sausage link on each crostini)
- butter or cooking oil of choice
- 1 cup shredded cheese
- maple syrup to drizzle over top
INSTRUCTIONS

Crack 3 eggs in a small bowl, add kosher salt and pepper. Beat with a fork until mixed.

Crack the other 3 eggs in a large bowl, add the milk or creamer and sugar. Beat with a fork. Add the bread slices and toss until they are coated.

Preheat the griddle to medium low heat for a few minutes. Add the breakfast sausage links and cook 8 to 9 minutes, turning a few times.

Add some butter or cooking oil to an empty side of the griddle while the sausage is cooking. Slowly add the eggs that were beaten with salt and pepper, using a spatula to keep the eggs contained. Scramble the eggs for 2 to 3 minutes and remove once cooked.

Add more butter or oil to the griddle and the slices of French toast/ crostini. Flip them after about 2 minutes. Top each with the eggs, cheese, either a half or whole sausage link, and more cheese.
Note: I had the best luck using tongs to add the bread to the griddle and flipping them.

Cover with a melting dome until the cheese melts. Turn the griddle off if you think the bottoms of the crostini will cook too much.

Serve with maple syrup to drizzle over top.
