Blackstone Cajun Shrimp Cocktail is an easy and healthy appetizer recipe for the griddle, or the perfect addition to a charcuterie board!

INGREDIENTS
- 2 pounds jumbo shrimp (mine were peeled and deveined with the tails on)
- olive oil
- Tabasco or cayenne pepper sauce
- 1 1/2 tablespoons Cajun seasoning
- 2 tablespoons lime juice
- 1 cup ketchup
- 1 tablespoon prepared horseradish
- 1 tablespoon Worcestershire sauce
- 3 to 4 cloves garlic finely minced or grated
- Optional: parsley, lime wedges
INSTRUCTIONS

Pat the shrimp dry very well and put them in a bowl with some olive oil, a few dashes of the hot sauce, 1 tablespoon of the Cajun seasoning, and 1 tablespoon of the lime juice. Toss until coated.

Put the ketchup in a bowl with the remaining Cajun seasoning and lime juice, more hot sauce, and the horseradish, Worcestershire sauce, and garlic. Stir until mixed and set aside.
Note: Taste and add more horseradish and/or Cajun seasoning if desired.

Preheat the griddle to medium for a few minutes. Add some olive oil and the seasoned shrimp. Cook 4 to 5 minutes, mixing and flipping with hibachi spatulas.

Chill the shrimp or serve at room temperature. Serve with the spicy cocktail sauce for dipping and parsley and lime wedges if desired.
