Blackstone Cajun Chicken and Peppers is a healthy dinner recipe for the griddle, it can even be served as tacos or lettuce wraps!

INGREDIENTS
- cooking oil of choice
- 1 1/2 pounds boneless, skinless chicken breasts sliced into smaller pieces
- 1 onion sliced
- 1 red bell pepper sliced
- 1 orange bell pepper sliced
- 2 jalapeno peppers sliced (seeds removed or leave some in for added spice)
- kosher salt, pepper, Cajun seasoning blend
- 4 to 5 cloves garlic minced
- 2 tablespoons lime juice
- a few dashes Tabasco sauce or cayenne pepper sauce
- Optional: flour tortillas, Boston lettuce (for lettuce wraps), sour cream, and/or shredded cheese
INSTRUCTIONS

Prepare your ingredients and place everything on a tray or baking sheet. Carry it all out to the griddle on the tray.

Preheat the griddle to medium heat for a few minutes. Add some cooking oil of choice and the chicken, onion, and the peppers. Season with kosher salt, pepper, and some Cajun seasoning. Cook 6 to 7 minutes, flipping and turning a few times with hibachi spatulas.

Add the garlic, lime juice, and Tabasco or cayenne pepper sauce and cook 2 to 3 more minutes. Taste for seasoning and add more kosher salt, pepper, and/or Cajun seasoning if needed.

Serve as is or as tacos or lettuce wraps with flour tortillas, Boston lettuce (for lettuce wraps), sour cream, and/or shredded cheese.
