Blackstone Alice Springs Chicken is a copycat version of the Outback classic dish, only this recipe is for the griddle or flat top grill!

INGREDIENTS
- cooking oil of choice
- 6 slices bacon cut into bite size pieces, I used kitchen scissors
- 8 ounces sliced mushrooms
- 4 thin cut chicken breasts
- kosher salt, pepper
- 1/2 cup store bought honey mustard sauce
- 4 slices Colby Jack cheese
- Optional: chives for garnish, more honey mustard
INSTRUCTIONS

Preheat the griddle to medium for a few minutes. Add a little cooking oil, the pieces of bacon, and the mushrooms. Cook 7 to 9 minutes, mixing together with hibachi spatulas. Remove and set aside.

Add more cooking oil and the chicken breasts. Season both sides with kosher salt and pepper. Cook 6 to 8 minutes, flipping a few times.

Drizzle some honey mustard on the chicken and top each with the bacon, mushrooms, more honey mustard and a slice of cheese. Cover with a melting dome until the cheese melts. Garnish with chives and serve with more honey mustard if desired.
