Chorizo breakfast burritos are a great way to start your morning (or evening)! Simple Ingredients and quick to make.

INGREDIENTS
- 1 lb. ground chorizo
- 1 large russet potato, diced
- 4 strips bacon, diced
- 6 eggs
- 2 Cups shredded cheddar cheese
- 2 Cups shredded Oaxaca cheese
- 6 large tortillas
INSTRUCTIONS
- Preheat griddle to medium heat.
- Dice up large russet potato (or two smaller potatoes) into 1/2 inch pieces. Also dice bacon into 1″ pieces.
- On the griddle, bring diced potatoes and cook first. Then bring on chorizo sausage and diced bacon. Cook ingredients until done. Finish bacon a little before it gets crispy so it doesn’t overcook later.
- Cook scrambled eggs until done.
- Combine chorizo, potatoes, bacon, and eggs altogether on griddle. Sprinkle shredded cheddar and Oaxaca cheeses on top and mix.
- Fold cooked ingredients into center of a large flour tortilla and fold into a burrito.
- Griddle the burrito on top and bottom for at least 30 seconds or until the desired brown crust is formed. Serve and enjoy!
NOTES
- This chorizo breakfast burrito recipe can be done in a large skillet instead of on a griddle. Cooking times will vary as you’ll need to cook items individually instead of all at once.
- Add ingredients such as avocado and salsa into burrito before folding.
- Large flour tortillas should be 10-12″. You can use smaller tortillas which will make more.
