INGREDIENTS
- 2 Top sirloin cap steaks (or skirt steak as a substitute)
- Nuetral oil as a binder
- Pizza seasoning (Cuisinart Seasoning)
- Pizza Sauce
- 2 Packs Prosciutto
- Bacon diced and crispy
- Mozzarella cheese
- Thinly sliced parmesan cheese
- Parsley for garnishing
Pesto Sauce
- 2 cups Basil no stems
- 2 tbsp Pine nuts
- 4 cloves Garlic
- ½ cup Olive oil
- 2 tsp Red pepper flakes
Instructions:
- Start off by adding two cups of basil into a food processor with garlic, pine nuts, garlic, and red pepper flakes. Mix for a minute or two and then slowly add the oil from the top. Remove from the processor and store in the fridge till it is needed.
- Pat dry your sirloin cap steaks and butterfly them, evenly. Be sure to butterfly in the direction that will allow you to cut against the grain when the pinwheels are finished.
- Add butcher paper on top of your sirloin caps and use a mallet, or a baking pinwheel, and pound the thickest parts to be thin. Get the meat to be as even as possible and wide.
- Apply canola oil to the surface of both sides and then season generously. Pick a side and build the core. Start with pesto, spread it evenly on the whole surface, add parmesan chips, and add the prosciutto and the shredded mozzarella cheese. Start at the smallest end and roll your pinwheels tight.
- Tie them off with butcher’s twine, be sure to tie them where you can cut the pinwheels and have even thicknesses.
Cooking Directions:
- Fire up your grill for direct grilling and add a cast iron griddle (Add a link here to purchase). Apply canola oil and let it warm up for 10 mins. When the surface is 500 degrees (searing temps) add the pinwheels on the flattest side. This will crust the melted cheese and sear the meat, creating a seal to keep all the delicious cheese/sauce inside the pinwheel. Sear for 4-5 minutes and then transfer to the indirect (or smoker) at 275 degrees with hickory wood chunks. Smoke until an internal temp of 125 degrees.
- Now add pizza sauce to the top, mozzarella cheese, pepperoni, and bacon bits (be sure to have the bacon cooked and diced prior). Let the cheese melt in the smoker (about ten minutes) and then remove.
- Rest for 10-12 minutes and garnish with parsley.
- Slice and serve, and enjoy with friends and family!
